Ethiopia Uraga
Read time: under 1 minute.
Uraga is next level. A "fresh-crop" harvest is sought after in the coffee world because it delivers an undeniable pop of flavor on the cupping table. What makes coffee stand out more is when you've tasted 'Flavor Country' and realize there are structures and layers to those flavors as you keep tasting and drinking through that cup. Specifically, this is Uraga. On the cupping table, some fragrances and aromas remind us of fresh mandarin, ripe mango, lemon/lavender oils, and fresh flowers. The cup is lovely; why lie. From hot to cooling and everything in between, lychee, ripe yellow peach (think donut and/or early amber peaches), strawberry, rose, and a juiciness that takes us back to sipping fruit punch.

Process Explained:
This washing station uses a combination of machinery to sort, pulp, and remove the mucilage. The final product is a bean with about ten percent mucilage left on it that is fermented for 24 hours before finally being hand-washed and laid out to dry by the sun on beds for 9-12 days. The beans are not exposed to direct sunlight. The coffee is turned and inspected every few hours to ensure consistent drying. The moisture content is measured during these inspections, and the beans are sorted for any remaining defects. The coffee is then bagged and stored.
