The Mustafa family has done it again. It is our fourth year partnering with our dear friend, Ana Mustafá, and the village it takes to produce coffee. Crucero is the flagship process of the Mustafa Family. This fed-batch fermentation technique involves mixing several batches of ripe, pulped coffee cherries in their traditional fermentation tanks. In this, they have uniquely created a cup profile without extreme peaks of specific flavors, which we call round. The mouthfeel is soft but complete, so we call that creamy. And the one thing that keeps bringing us back to Crucero is its fruit-filling character in the cup to tie everything together officially, so we call that balanced. It is a classic from La Real Expedición Botánica, and we do our very best to bring this coffee into our roastery every year. The cup has a sweet, balanced profile of raw honey, dark chocolate, and hibiscus.
